A Roman chef and his partner, a small room in Ruzafa, and pasta rolled by hand every morning. This is what sits behind it.

Three minutes with Bruno and Giada: where Marea came from, how the food is cooked, and what leaves this kitchen.
Who cooks, and who is out front?
Bruno Giorni is the chef, and an accredited member of the Associazione Italiana Chef for years now. He cooks Roman: carbonara, amatriciana and cacio e pepe made the way they are made in Rome, plus fish, burrata and focaccia pugliese. The fresh pasta is mixed and cut by hand in the restaurant, every day or two — more than six kilos at a time.
The guanciale comes from Amatrice, through a local supplier who ships it to them. The vegetables are km-zero, from the market next door.
Giada runs the room and the bar — the cocktails are hers — and she is the one who answers the WhatsApp.

Why does it take longer here?
We would rather make everything ourselves than buy it ready-made. The sauces, the minced meat, the vegetables, the fish that arrives whole and is cleaned here. Small things a guest never sees, and the ones that separate one restaurant from another.
The guanciale comes from Amatrice, through a local supplier who sends it to us. The vegetables are km-zero, from the market next door. Pecorino romano is not substituted: without pecorino there is no Roman cooking.
And if a sauce splits beyond saving, the dish is made again. We would rather remake a plate than serve a bad one.
What is the room like?
Nine tables, eighteen to twenty covers, and a terrace. It is a small room, which is why booking is worth it: it fills with very few people.
The plain facts
While Google's hours load, what is almost always true:
- The room opens at 18:30
- The kitchen runs 19:30 to 23:00 (23:30 Friday and Saturday)
- The last order time is real: arrive at 22:15 and you will eat well
- Saturday lunch too, 13:30 to 16:00
- We close one or two days a week, and the day changes
There are two of us and the day off moves from week to week. The hours above come straight from Google, which Giada keeps up to date herself. If you are coming from any distance, message us on WhatsApp and we will confirm.
